Southern Pineapple Cake: A Slice of Southern Heaven

Materials:

For the pineapple cake layers:

– 2 cups all-purpose flour
– 1 and a half cups of granulated sugar
– 2 teaspoons of baking powder
– 1/2 teaspoon baking powder
– 1/2 teaspoon of salt
– 1/2 cup unsalted butter, softened
– 1/2 cup vegetable oil
– 1 cup canned crushed pineapple, unripened
– 3 large eggs
– 1 teaspoon of vanilla extract
For the Pineapple Cream Cheese Ice Cream:
– 1/2 cup unsalted butter, softened
– 8 ounces cream cheese, softened
– 4 cups of powdered sugar
– 1 teaspoon of vanilla extract
– 1 cup canned crushed pineapple, drained
For garnish (Optional):
– Fresh pineapple slices
– Maraschino cherries
– Toasted coconut flakes

Instructions:

Preheat the oven:
– Preheat your oven to 350°F (175°C). Oil and flour, line three 9-inch round cake pans or parchment paper for easy removal.
Prepare the Pineapple Cake Batter:
– In a large mixing bowl, combine flour, sugar, baking soda, baking soda and salt.
– Add softened butter, vegetable oil, crushed pineapple (with juice), egg and vanilla extract to the dry ingredients.
-On medium speed, beat until properly scraped down the sides of the bowl and combined smoothly.
Bake the Cake Layers:
– Divide the dough equally among the ready-made cake pans.
– Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center of the cakes comes out clean.
– Remove from the oven and let the cakes cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
Make Pineapple Cream Cheese Ice Cream:
– In a mixing bowl, beat softened butter and cream cheese until smooth and creamy.
– Slowly add powdered sugar, beat until smooth and fluffy.
– Mix with vanilla extract and strained crushed pineapple.
Assemble the cake:
– Place a cake layer on a serving plate or cake stand. Spread a layer of pineapple cream cheese ice cream on top.
– Repeat with remaining cake layers and ice cream, piling on top of each other.
Freeze the Cake:
– Frost the top and sides of the cake with the remaining pineapple cream cheese and smooth it with a spatula.
Garnish (Optional):
– Decorate the top of the cake with fresh pineapple slices, maraschino cherries and toasted coconut flakes for a tropical flavor.
